More shrimp for Spring!

With the spring in full bore and seasonal storms sweeping across the states, what a time for a light and satisfying meal. When the weather starts to get warm, nice and pleasant it is a good idea to have meals that are a little lighter, low on fat and high in taste (but shouldn’t all meals be like that?). Well depending on your tastes and preferences you may desire a quick and easy meal or a meal that you could make with a group of friends or family.

THG’s preference is a meal that will satisfy all of your culinary and hunger needs and sauteed shrimp over angel hair pasta drizzled with garlic, parmesan, and parsley. How exactly was the shrimp cooked? Well loyal readers, I will not with hold the simple and delectable recipe for this meal. Okay, are you ready? Well here goes: 1. Cook some angel hair pasta (follow directions on the package). 2. Cook some chopped garlic in olive oil and red pepper flakes over low heat for 15 min. 3. Pour the garlic and red pepper flakes over the pasta and sprinkle with black pepper, chopped parsley, and shredded parmesean cheese. 4. The Shrimp! 5. Take 1 lb. of de-shelled and cleaned shrimp and place within a foil wrap. 6. Within the foil wrap add a citrus hot sauce (THG used a pineapple hot sauce), a tsp of butter and your favorite seafood seasoning. 7. Cook the shrimp in the foil wrap on the grill over medium-high heat for 7-10 minutes.

Once you get the shrimp off the grill remove the shrimp from the foil and save some of the juices for dipping and the pasta. Take some of those “schrimpeses” and toss them in with the pasta and serve them up! As a side dish make some grilled vegetables, a salad or a piece of cake. And guess what it doesn’t get much better than that…..
