It has been a busy week, with a few days of traveling, some excessive eating and a few free meals and drinks! It was a good week to pretend to be a grown-up and there were no problems with that. THG enjoyed multiple free meals and even had some desert for a change (yeah chocolate cheesecake is pretty good). Of course my favorite meals are the ones you can make at home and then have some leftovers for the next day or three. And on that note, I love the pasta and man did THG have some good pasta the other night!

The main ingredient, spinach spaghetti!
How about some spinach spaghetti! So I was trying to decide what to “officially” call the spinach spaghetti with vegetables and grated cheese. The common description is usually referred to as a prima-vera, but this spaghetti will be called “green spaghetti with extra vegetables”. The break-down of the recipe is pretty simple so I’ll just roll it through for the readers out there. Step 1. Infuse some olive oil with hot pepper flakes (for about 30min). Step 2. Chop up some garlic, onions (or scallions), sweet peppers and broccoli. Step 3. Saute the the garlic, onions and sweet peppers in the infused olive oil until all are tender. Step 4. Grate a cup of parmesan and a quarter cup of gouda cheese and set aside for the moment. Step 5. Boil the spaghetti. Step 6. Mix all of the vegetables in with the pasta till well mixed and then mix in the cheese. Sprinkle in some cracked pepper and serve. You can pair the “green spaghetti” with a white or red wine and then pair with a beer when serving the leftovers.
