Is it Groundhog day?

So the day started out just like yesterday; it was crisp, clear and the Weather Channel was on. Hot coffee, pumpkin muffins and a honeybell tangelo accompanied my first check of email and a quick read of the headlines. For some reason it felt just like yesterday or should I say Groundhog Day!

Well it seems like the weather in these parts (somewhere-ville Florida) has been improving and the days have been getting slightly longer each day. To the disappointment of many parts in the country they probably wish they don’t see anymore snow the rest of the year. But dude let me tell ya, nothing goes better with nice weather than burritos, beer and broccoli. Well yeah those three B’s go well together but what is really awesome is white bean enchiladas. The white bean enchiladas are one of THG’s favorite meals and only take about 30 minutes to prepare and cook.

White bean enchiladas:

1. 1 can of white beans
2. and then in concert: 1tsb cumin, 2 tlbs sour cream and green chilies, 1 tbl green onion and cilantro
3. 6 corn tortillas to wrap around the enchilada mix
4. 1/2 cup of grated cheese mix

Mix the first 2 ingredients in a bowl and mash together till well blended and “smooth”. Spoon the bean mixture into the corn tortillas and place in a baking dish. Cover the tortillas in cheese and add a little extra green salsa to da top and bake at 350 degrees for 20 minutes.

When you have a meal like that (with some blue chips and a cold beer) it can be a little like Groundhog Day, at least for a day.
