Upset are awesome! However, my bracket has almost been busted with some of the unexpected upsets. Of course when you play multiple brackets (like THG) it takes a little more work to keep track of your wins and losses. The best joy of busted brackets is chillin’ out and watching the games at home and following the games at work. When you are at home the BBQ nachos were the perfect treat for those early and late night games. When the weekend hits and you may have more free time to watch your game(s) a slightly larger and maybe more complex meal is a good fit.
After a full dose of nachos or other finger foods on Thursday and/or Friday THG was ready for a sandwich, burrito, wrap or maybe pizza. THG sometimes like to double dip on the brunch/lunch/dinner meal. To celebrate the first weekend of March Madness I decided to go for both sandwiches and wraps, and then add in some sweet potato fries! But the recipes are on the simple side to make it easy to prepare, eat, watch and eat some more. The sandwiches were of the ham and cheese variety consisting of thin shaved county style ham topped with havarti cheese. Now you will need a soft roll, lightly toasted layered with honey mustard, lettuce, bean sprouts, black pepper, a dash of cajun spices, cheese, country ham and then another spread of honey mustard (or maybe dijon). Cut, separate and enjoy. A basketball wrap for the tourney starts with either tomato or spinach wraps, tortilla, or burritos and sliced or mashed avocado. To make the wraps strong and ready for the game get a can of white beans (drained and washed), sliced cherry tomatoes, and a small fillet of flank steak or t-bone and cook to medium rare. Spread the mashed avocado on the wraps and then place the tomatoes, beans and steak on the wrap and cover with your preferred flavor of shredded cheese. Microwave for 20 seconds or bake for 3-5 minutes at 375 degrees. Roll up the wrap and you are ready for the games.
