Softball and a little chicken

Alas, it seems that the summer is starting to wind down…. Even though the temperatures (at least in these parts) have yet to break here in mid-August. Although it makes one wonder, why you would even suspect that it would start to cool down in August, any where in North America. But I digress. It stills feels like the end of summer with kids getting ready to go back to school and even elementary and high school are getting ready to start. So in these dog days of summer I’ve been doing some backyard grilling, keeping it healthy, waiting for hurricanes (bet the waves in Hawai’i are good right now!) and thinking about tailgating season!

But hey tailgating is still about three weeks away by my count. I don’t care what some people say, you really can’t tailgate before the month of September! I understand that pre-season NFL games are starting and some college football games are played before September 1st, but seriously my life doesn’t and tailgating schedule is not controlled by ESPN or other media entities. My gut always tells me when tailgating season begins. Really THG is still into day-trips and hurricanes still and so far this hurricane season has been a little disappointing.

So as I’ve working on some summer grilling and here is the latest easy recipe: Guacamole stuffed grilled chicken!

Guacamole:

1. 1 Florida avocado or regualar avocado
2. 1 tsp ground black pepper
3. 1 tsp ground white pepper
4. 1 tsp kosher salt
5. 1/4 cup rough cut vidalia onion
6. 1/2 squezed lime juice
7. 2 cloves garlic (pressed)
8. hot pepper flakes

Take all of the ingredients and place in a bowl. Take a fork and mix well until all of ingredients are well blended, but not too fine or smooth. Add a little salt and pepper to your liking, then cover and refridgerate.

Grilled Chicken:

1. 2 chicken quarters or 4 thighs and 2 breasts (whichever you like!) Make sure the chicken is washed and patted dry
2. Cut an openning in the skin and stuff with guacamole, not too much about a tablespoon
3. brush or spray a light covering over the chicken parts
4. cover the outside of the chicken with ground pepper and salt

Place on the grill for a medium or medium-low heat for about 10-12 minutes a side. You should get a golden brown color over the chicken skin and the bird should remain nice a juicy when you pull it off the grill. Keep an eye on the chicken when cooking as to not allow too much flame or fire under the bird. Serve with the rest of guacamole on the side and a good accompaniment is grilled squash and an ice cold beer!
